This shellfish stock is incredibly flavourful. Compared to fish stock, which has a light, almost perfumed flavour and is clear, shellfish stock has a rich, deep flavour and is a vibrant red colour.
Popular seafood dishes such as paella and risotto benefit greatly by using this shellfish stock. It is also used in the classic French recipe for sauce Américaine with the addition of fresh tomatoes and flavoured with a dash of cayenne pepper, then traditionally served with lobster.
