This sauce is particularly recommended as the main ingredient in patatas bravas (spicy potatoes), as a condiment for fried eggs and to give a bit of “zest” to any kind of meat, fish, vegetable, rice or pasta dishes, as well as in omelettes, stews, etc. May be used at room temperature or heated over low heat in a saucepan. For a milder sauce: add mayonnaise. For a spicier sauce: add Riojan hot peppers, tabasco sauce, ground cayenne pepper, etc.
